Tips for Icing a Cake Level the cake: trim the tops of the cake layers to make them even. Use a sharp knife. Fill the layers: Smooth icing on the top of the first layer, then position the next layer bottom side up. Fill gaps with icing. Ice the top: Heap icing on to the center of the cake top and spread evenly until icing overlaps side of cake. As you are working, be sure not to allow the spatula to touch the bare cake, which can cause crumbs to mix with the icing. Ice the sides: Spread icing on sides using long even strokes, working from the top down. Force loose crumbs to cake base. Smooth the sides: Dip the spatula in hot water, lightly press it against cake side and turn the cake plate in a full circle until icing is smooth. Smooth cake top: Dip spatula in hot water again and place it flat on top outside edge of cake. Move the spatula to the center of the cake - smoothing out icing - then lift spatula, rotate cake, and repeat until top is smooth.

    Viennese spatulas are the only kitchen utensil I ever use. They are so versatile from stirring, mixing, and cutting to even being used as a spatula while cooking. I ordered 42 so I could get free shipping.

    These spatula's save me in the kitchen. They are soft and bendable, but sturdy enough to cut around the tortes and cheesecakes I make in a springform pan. They are a little bigger than I expected, but I still love them. How they made my life easier is, I'm health conscious, and also a bit lazy in the kitchen - this means, I don't like buttering and flouring sides of cake pans; these spatula's really help me eliminate that step by separating the cakes from the side of the pan after they are finished baking. The only thing is, they are plastic - so beware, don't use it when the cake or the pan is still hot. I tried using it when the cake wasn't entirely cooled and sort of melted the plastic spatula - it wasn't bad or anything, I just rebended it straight again. And...my dishwasher didn't melt them, so I believe they are dishwasher safe too. They are a wonderful addition to my kitchen!

    These are brilliant! I recently got an ice cream maker and found that none of my spatulas or spoons I already owned did a quick, efficient job of scraping out the ice cream from the churn's freezer bowl. If you've made homemade ice cream you know quickly removing it from the freezer bowl after the churn is important, especially for lower fat or lower sugar ice creams as they will star freezing solid, almost ice like, to the sides of the bowl. I needed a spatula like tool that was sharp enough to scrape the thick ice cream from the bowl's sides, firm enough to handle big scoops and flexible enough to sweep around quickly. these are PERFECT!!!!! Very specific use for these I realize but thought other ice cream lover's might like to know!
